Cloudy Hill Natural Process
Natural Process is the most traditional way of drying coffee, where coffee beans are dried with the fruits left intact. At our facility, after the fully ripe coffee cherries are hand-picked, they are then sorted and washed before being laid to dry on raised beds for up to 28 days. This can pose difficulties for many producers as most of the fruits can become over-fermented. However, at our facility, throughout the drying process, the coffee cherries are frequently turned and rotated for drying uniformity, in an environment that is humidity- and temperature-controlled. This allows us to achieve noticeably pleasant, strong fruit flavors and a heavy body unique to traditional natural process coffee.
